Pumpkin Orange Vanilla Bean Butter

That’s a mouthful, isn’t it?

But I couldn’t leave any of those descriptors out. It’s Pumpkin. And Orange. And Vanilla Beans. And it’s butter. Great butter, too…it’s Kerrygold.

In fact, it’s the brand new Kerrygold Naturally Softer Pure Irish Butter. Have you seen it yet? you can find it in a small tub, right in the butter section, along with the spreadables. Supposedly this Kerrygold is considered spreadable – and in truth, it IS softer, but I wouldn’t push it to spreadable, exactly.

I would say, however, that it is delicious.

It has that same rich Kerrygold flavor we all know and love, and yet, it’s softer and more user friendly in tabletop usage. (It’s also great to cook with!)

I was asked by Kerrygold to come up with something to DO to this butter, so that you would find it versatile and imaginative. Honestly? I could just sit down with a spoon and eat it out of the tub, but that’s kind of cheating. So I came up with this, and we spread it on my pumpkin yeast bread, as well as the Pumpkin Pie Mini Popovers I’ll be posting in a few days.

And I thought it was good before.

Just look at the flecks of deliciousness in there! I took about half of the tub and melted it just a bit in the microwave (about 7 seconds), then stirred in a heaping tablespoon of pumpkin, the zest of half an orange, a dash of sea salt, and the seeds from half a vanilla bean.

It’s been spread on just about everything that sits still long enough – french toast, regular toast, pumpkin bread, pumpkin pop overs, and PORK. That’s good stuff.

Okay, I have to go eat some more of that now. No joke. It’s midnight as I write this, and it’s calling my name. Go on – try it! You’ll feel the same way!
